Blueberry Breakfast Sausage

I've named these sausages breakfast sausages, but they can really be made at any point in time for any meal. I brought them to my friend's potluck a few weeks ago and they were a hit!

Ingredients

1/2 c blueberries (I used frozen)

4 cloves of garlic, chopped

1/4 c onions, chopped

1 egg

1 tsp salt

1 tsp cinnamon

1/2 tsp black pepper

2 T Litehouse poultry freeze dried herbs (or any other poultry or Italian spice mix you like)


Mix them all up, press them into small patties and cook them in a pan with some fat. I used lard I rendered from Harvest Moon. They are delicious! I added mine to some sauteed Brussels sprouts, onions, garlic, mushrooms and sweet potatoes and topped them with mashed avocado. Yum!
