I was first introduced to this recipe by my Monday Meal Kit from Crampton's Market. I've made it a few times since. It makes a TON of soup - we are eating it for about a week unless we freeze some of it. I've been asked about the recipe a few times since and have been searching the web for a similar recipe to share with them, but I haven't found anything as uncomplicated as this one, so I am writing it up so I can share it with you!
Ingredients
1 pound ground beef
1 pound ground pork
1 onion, chopped
1/2 head of cabbage, chopped
1 small can tomato paste
1 large can crushed tomatoes
1 cup rice
3 cloves of garlic, minced
6 cups bone broth (give or take)
Salt to taste
In your soup pan, sauté the onion in a fat of your choice (I typically use lard). Add the meat and brown it. Once that is complete add the rest of the ingredients, simmer on low to medium heat until the rice is fully cooked and voilà! You are done. Easy peasy and your dinner is ready for the entire week.
