Think of these as your new red velvet cake. But, it's beets so you're getting some veggies in! And it's chocolate so, delish.
Ingredients
1.5 c beets, shredded (give or take, about 2 medium sized beets)
3 eggs, at room temperature
1/4 c coconut oil
1/4 c cocoa
1/4 c coconut flour
2 T honey
1/4 c chocolate chips
1/2 tsp baking powder
1/2 tsp baking soda
Dash of salt
Preheat the oven to 350 F. Melt the coconut oil in the oven while it's preheating. Add the honey, too, if it is hard at room temperature. Mix all of the ingredients then place into 10ish muffin cups and bake for 20 minutes.
These go perfectly well with my whipped coconut frosting. I highly recommend adding it!
