This is a super easy twist on my Chocolate Chip Cookie recipe. They're just a little chocolate-ier.
Ingredients
1/2 c almond flour
1/2 c coconut flour
1/2 c cocoa powder (Use high quality. It is always worth it.)
1/2 c coconut oil
1 egg
3 T honey
1 t salt
1/4 c chocolate chips
Preheat oven to 350 F. Mix all ingredients together. It's easiest of the coconut oil is melted and the egg is at room temperature. Add the chocolate chips last. Roll the cookies into balls and press into a cookie sheet on a well oiled pan or parchment paper or a silicon sheet. Bake for 12 minutes. Do not over cook. They will work better if slightly under cooked. Allow to fully cool before eating to prevent crumbling. Store in an airtight container and enjoy an even better tasting cookie tomorrow (oh, the wonders of coconut flour!).
