Greatest Green Beans

I think I learned this recipe on the back of the turkey bacon I used to buy in chiropractic school. I'm glad I finally upgraded to good quality, local pork bacon!

Ingredients

2 c green beans, chopped

1/2 c onions, chopped

1-2 cloves of garlic, chopped

3 strips of bacon

1/4 c pecans

Dash of salt

Optional: Olive oil for drizzling (I like the garlic olive oil from Frescolio)


Cook the bacon in a pan to your liking. remove the bacon, but leave the fat. If you need additional fat, add your favorite (I prefer lard or butter). Sauté the onions, garlic and beans in the bacon fat, until they are cooked just the way you like them. I prefer mine just a little crispy. When the veggies are cooking, chop your bacon. Add it back to the pan, sprinkle with pecans and sea salt. Once you remove from the pan, drizzle with your oil, if you'd like.
