I've never been a real pasta fan and I know that makes me weird. But, with this recipe, hopefully you'll realize that you can eat eat and the good, nutrient dense stuff that's often added to pasta, but not get the big insulin spike from the pasta.
Ingredients
1 lb grassfed ground beef, pork or sausage
2 c pasta sauce (check the ingredients and look for something without added sugar or soybean oil)
1/2 c onions, chopped
1/2 c bell peppers, chopped
1/2 c mushrooms, chopped
2 cloves of garlic
1 c spinach
Coconut oil or olive oil
Heat up a pan with the oil over medium heat. Add the chopped veggies (minus the spinach). Once they start to cook, add the meat and cook thoroughly. Last, add the spinach and the pasta sauce. Once then sauce is heated and the spinach is wilted, you're done! If you really miss pasta, having this with smashed potatoes is a great alternative. Remember, rather than finding replacements for all of your favorite meals, find a new normal.
