It's like fall threw up in the cookie jar. If you're into pumpkin spice everything. You'll be in to this delicious spin on chocolate chip cookies. These are also a good option if you are sensitive to nuts. They utilize coconut flour rather than almond flour.
Ingredients
½ c coconut flour
½ c pumpkin (canned or cooked)
3 T coconut oil
2 T honey
2 T maple syrup
1 egg
½ tsp vanilla
Dash of salt
Spices - any combination of the following: cinnamon, ginger, nutmeg, cloves, allspice
¼ c chocolate chips or chunks
Optional: Handful of pecans and pumpkin seeds
Melt coconut oil. I like to put it in an oven safe bowl and place it in the oven while it preheats. Mix all of the ingredients together adding the chocolate chips last. Bake at 350°F for 12-15 minutes. Enjoy!
