Meatballs are such a great way to easily punch up the protein in your diet. Most of us need that! Once they are prepped, you just have to bake them so hands on time of often minimal. They freeze well, too, making them a great option for meal prep. They can be eaten at breakfast, lunch or dinner. Here are my go-tos for meatballs.
Lamb Feta Meatballs. We don't buy lamb often, but when we do, you better believe this is what I'm using it for. We also don't eat cheese very often, but the feta in here is excellent. If you like Greek flavors, you'll love this recipe.
Blueberry Sweet Potato Breakfast Meatballs. I often forget how good certain fruits taste with meat. It seems weird, right? But, the addition of blueberries in these meatballs is excellent. I keep frozen, wild blueberries on hand so I can whip these up whenever I'm in the mood for the, which is quite often. I often omit the kale, because I don't buy it very often, but I'm going to make a point of adding it - I need some more leafy greens in my life!
Apple Cinnamon Meatballs. Who would have thought that I would have TWO breakfast meatballs on this list. That being said, you can eat these any time of the day. We all know how good apples and cinnamon are together. These little guys pack a delicious punch.
Liver Meatballs. Don't be fooled by the name! The liver taste is covered by the rest of the ingredients. I don't like the taste of liver, but I know how healthy it is, so I'm always trying to hide it in food. Like these meatballs. It's pretty incredible what a good pasta sauce can do to a recipe.
Sticky Ginger Scallion Meatballs. All the Healthy things has some really killer recipes. When I find one I like, I make it over and over and over. This is one of them. Go find yourself some coconut aminos and whip this one up!
