When you're transitioning into a grain free lifestyle you might really miss the starchy-ness of bread, wraps, cereal and rice. If this is the case, don't hesitate to eat potatoes. They are a vegetable and full of awesome nutrients. This is one of my favorite ways to make them.
Ingredients As many baby potatoes that can fit on your pan, cut in half
Olive oil
Salt
Garlic
Optional: rosemary, paprika or chopped onions
Set the oven to 425 F. Put the half baby potatoes face down on an oiled sheet pan (I use coconut oil and a pan liner for this). Cook them for 20 minutes. At this point they should be soft enough to smash down with a fork. Drizzle them with olive oil and sprinkle them with the spices. Bake them for another 15-20 minutes or until they are golden brown and crispy.
