Who would have thought that dairy free frosting could be so delicious and easy?! I love putting this stuff on my ginger molasses cookies. It can also be found in my cookbook, The Ancestral Kitchen.
Ingredients 1 can of coconut milk, chilled in the fridge overnight
2 T maple syrup
Dash of salt
Dash of cinnamon (optional)
1/2T vanilla (optional)
When a can of coconut milk is chilled, the creamy part and the watery part separate. Scoop the creamy part into a bowl with the rest of the ingredients. Mix it all up well and enjoy!
